Lemon Myrtle has a complex blend of citric flavours: lemongrass; lemon and lime oil. This extremely versatile herb is suited to almost all types of cooking from fish and seafood dishes to white meats such as chicken; veal and pork. Also great with vegetables and in Asian style dishes. Performs equally well in yoghurt or crème fraiche; in sauces or desserts; and baked into biscuits and cakes. Lemon Myrtle has a distinctive character and unique strength of flavour with simple applications such as a seasoning added at the end of a dish as well as incorporating it into the body of a dish. Too much intense heat can dissipate the flavours; however the natural oils in the dried ground leaves will impart themselves well into hot liquids and warm oils beautifully.
